Banana powder is made from banana pulp, which is mechanically chopped and then hydraulic shearing processed in a colloidal mill to make a paste. Then sodium metabisulfite is used to brighten the yellow color of the paste. The paste is then dried by either spray drying or drum drying, although the latter is more common because no paste is lost during drying. Drum drying also produces about 2% of the powder and dries it thoroughly. Regardless of the drying process, banana powder usually only stays fresh on the shelf for about a year.
Banana powder has been widely used in infant formula since the early 1900s as a way to keep babies healthy. In 1916 it was recognised as one of the "important industries of the West Indies", along with dried banana "figs".
Banana powder was found to be a "major source of carbohydrates and calories". Although it is usually low in protein, the beneficial ingredients of the powder are still "significantly better than other fruits". The powder was also found to be useful as a general treatment for dyspepsia .
In 1984, scientists from India were able to extract some of the "anti-ulcer compounds" found in banana powder, eventually producing a powder that was "300 times more active" in preventing stomach ulcers. Banana powder was later found to increase cell growth, thus healing previously ulcerated areas more quickly.
